
So, by now you’ve guessed that today is kind of a special day and I’m celebrating with a vodka mint Collins recipe. OK, not just kind of special, it’s very special. Today is Meghan from The Tasty Fork’s birthday! To celebrate, she’s having a birthday party and you’re all invited!

For an easy cocktail recipe, a vodka mint Collins is pretty simple to make, too.
Vodka Mint Collins is a refreshing spring or summer cocktail
Yields 1
Ingredients
- 2 oz vodka
- Tonic water
- 3 lemon wheels
- 1/2 oz simple syrup
- 1 tsp fresh lemon juice
- 2 sprigs fresh mint
- Ice
- 1 lemon wedge for garnish, if desired
Instructions
- Gently muddle lemon wheels, syrup, lemon juice and mint in a shaker. Add vodka and fill with ice
- Shake well
- Pour into glass; fill with tonic water
- Garnish with lemon wedge if desired
