May is here – this means we’re almost half way through 2016 already. Half. Way. How did that even happen? It sure wasn’t with my permission, I can guarantee you that! I feel like the days are just flying by – one day leaping into the next, passing milestones, making memories, trying to tuck them away and save them for later, trying to savor the moments and appreciate the time I have with my family and friends. We’ve had about one birthday a month the past three months, and mine is next month. I have a trip coming up with a friend at the end of the month, am trying to figure out what I want to do for my birthday in mid-June, then my brother is coming end of June through early July. My daughter’s 3rd birthday is coming up in September, and my son’s 18th (ACK!) will be in November… next time I blink we’ll be thinking about Christmas. Seriously. So… what kind of introduction to this recipe is that? Utter Chaos. Life is utter chaos sometimes. But it’s absolutely a beautiful chaos isn’t it? Just like this dessert!
My fabulous friend Devon introduced me to this recipe and I was SO excited to run home and whip up my first batch of meringue cookies which are the base of this recipe. I was so happy with how the cookies came out, and then crushed up into this? Yes, please!!
A little bit of almond extract in the whipped cream gives it just a little extra “something”. I love the depth of flavor it adds. You can mix and match the amount of cookies and strawberries you use to your personal preferences. My sister wanted more cookies in hers. The cookies are such a fine, airy consistency that they tend to “disappear” into the whipped cream base pretty quickly, so don’t mix this up until you’re ready to enjoy it.
This is such a light, fluffy, and airy dessert. It is perfect for the warmer months when you want something a little different. It’s a fantastic base to play with too – mix and match your meringue flavors, whipped cream flavors, and mix-ins. Try mint and chocolate, vanilla and peach, etc.
Ingredients
- 1 1/2 cups whipping cream
- 1 TBS powdered sugar
- 1/2 tsp almond extract
- 10 large strawberries, diced into bite sized pieces
- 30 vanilla meringue cookies , crumbled
Instructions
- Combine whipping cream, powdered sugar, and almond extract in the bowl of a stand mixer. Whip on high speed until it reaches stiff peaks.
- Gently stir in the diced strawberries and crumbled meringue cookies.
- Serve immediately.
