We love a good burger at my house, so, when I discovered the 12 Bloggers theme for June was burgers, I knew I wanted to come up with something different and delicious.
My daughter had suggested one with mac n’ cheese on it, since she’d eaten one at a popular burger place in town. I headed to their website to check it out. Although interesting, and no doubt delicious, it just wasn’t the uniqueness I was looking for.
What I did find, after looking over their menu, was a burger using grilled cheese sandwiches for the bun. Amazing! I quickly set to work making my own version. {By the way, if you’re ever in Tucson, AZ be sure to stop by Lindy’s on 4th. They’ve got great food and the OMFG burger challenge that was featured on Man vs. Food a few years back!}
The result was this amazingly delicious, not to mention huge, burger that even my rapidly growing 13-year-old son was unable to finish. I was barely able to eat half, really wanted to press on, but I didn’t.

Ingredients
- 4- 1/3 raw burger patties
- 1 cup mushrooms, sliced {the quantity really depends on how much you like them. I used about 1/4 cup for each burger}
- 8 onion rings, about 2 per burger {I used frozen}
- 12 slices of Cheddar cheese
- 4 slices of Swiss cheese
- 16 slices of Texas Toast
- Iceberg lettuce
- Secret Sauce {recipe follows}
- 1/2 cup catsup
- 1/2 cup mayonnaise
- 1 dill pickle, diced
Instructions
- Prepare onion rings according to package directions; set aside
- In a large skillet, fry bacon until just barely crispy; set aside
- Prepare grilled cheese sandwiches {two per burger} with one slice of Cheddar cheese each; set aside
- Prepare Secret Sauce; set aside
- In a small skillet, sauté mushrooms in butter on medium heat; set aside
- Grill your burgers at about 350 degrees until slightly firm when pressed in the center
- Layer burgers on a grilled cheese sandwich beginning with patty, one slice each of Cheddar & Swiss cheeses, 2 slices of bacon, sautéd mushrooms, 2 onion rings, Secret Sauce, lettuce and top with remaining grilled cheese sandwich
- Combine all ingredients in a small bowl, mixing well
- Pour over burgers
Notes
I found that this recipe can be a challenge making on your own, so it's best if you can do more than one step at a time, even better if you have a cooking partner, as it cuts down on prep time
