

I know I’ve said this before, but, I love to eat. A couple of years ago Mark and I had reached a point where we were going out to eat several {and by that I mean 4-5} times per week. It wasn’t always for dinner. In fact, most of the time it was for lunch. I had recently left my job and Mark was home the most he’d ever been before. {Just to clarify, we own our own business and he had just started cutting back on hours}.
I’m not talking fast food here, either. We ate all kinds of food. Good food. Enchiladas, pasta with meatballs, orange chicken, big beefy burgers, french fries, mashed potatoes with tons of gravy. Then there was the dessert. Cheesecake, chocolate cake, creme brule, I could go on, but I won’t.
Well, as you can imagine, it caught up with us. With our pants getting increasingly tighter, we recently decided to change our eating habits. We cut out all sugar and ‘white’ food. {If it is or can be white, don’t eat it. Except for cauliflower} Now, for a girl who loves food, this wasn’t easy at first. I did pretty good during the day, but the nights weren’t so easy. You see, for me, that’s when my sweet tooth goes into action.
Luckily, I’ve discovered Werther’s Original Sugar Free Candy. Made with the beet derived sugar alternative Isomalt, they have a mere 8 calories and 3g of carbs per piece. They even come in four great flavors. Classic Caramel, Caramel Apple, Caramel Coffee and Caramel Cinnamon. While they are all delicious, my favorite is the Classic Caramel. I have to be honest, I was a little skeptical before I tried them. I didn’t think a sugar free candy could taste as good as the sugar-filled version. Boy, was I wrong! As soon as I popped a piece into my mouth I could taste the buttery, creamy flavor of the caramel. I was instantly hooked! My sweet tooth couldn’t have been more satisfied.
Sometimes, when I’m craving something a little more substantial, I like to whip up some {Sugar Free} Chocolate Caramel Crunch Parfait. It’s super quick to make and packs a ton of caramel flavor. Best part? I don’t have to feel guilty about eating it.
Here’s all you need:
- 2.75 oz bag of Werther’s Original Sugar Free Candy {Classic Caramel flavor, crushed}
- 1 small box sugar free instant chocolate pudding {1 oz size}
- 2 C cold milk
Here’s all you do:
- In medium bowl, combine pudding mix and milk. Mix until soft set {about 2-3 min}
- In four parfait or pudding cups, put 1/4 C pudding in each. Top with about 1 Tbsp crushed candies and another 1/4 pudding.
- Chill until ready to serve.
- Top with sugar free whipped cream, sprinkle with remaining crushed candies
