Because let’s face it. Who doesn’t love chocolate, graham cracker and marshmallow any time of the year?
These will leave you wanting s’more.
These S'more Chocolate Chip Cookies are perfect for summer, or in winter, when you wish it was summer!

Yields 20-24
Ingredients
- 1 C packed brown sugar
- 1/2 C granulated sugar
- 1/2 C butter or margarine, softened
- 1/2 C shortening
- 1 tsp vanilla
- 1 egg
- 2 1/4 C all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 C graham cracker pieces {3-4 squares broken into pieces}
- 1/2 C Ghirardelli Semi-Sweet Mini Baking Chips
- 1/2 C Jet-Puffed Mallow Bits
Instructions
- Pre-heat oven to 350*
- Beat sugars, butter, shortening, vanilla and egg with electric mixer on medium speed until fluffy.
- Stir in dry ingredients.
- Fold in graham cracker pieces, chocolate chips and marshmallow bits.
- Drop by rounded tablespoons {I used a cookie scoop} on an ungreased cookie sheet, 2 inches apart.
- Bake 11-13 min or until cookies are light brown.
- Cool for about 5 min before transferring to cooling rack. Cool completely
