Making slow cooker recipes makes me happy. I just toss in a few main ingredients along with some amazing seasonings, and a few hours later, I’ve got a fabulous tasting meal that my whole family will enjoy. Plus, using a slow cooker means I have time for other things.

Since my family, {okay, mainly me}, loves Italian food, I decided a great slow cooker lasagna soup recipe would be perfect.
How to Make Slow Cooker Lasagna Soup
I season the tomato sauce base much the same way I do the sauce I use for lasagna, and the spicy sausage only adds to the incredible flavor. It also gives the soup a nice little ‘bite’.
A little extra effort, like browning the meat before you put it in the slow cooker, is well worth the few extra minutes for the great tasting results this soup yields. Even my pickiest eater loves it, and that’s saying quite a bit.

Yields 6-8
Ingredients
- 1/2 lb hot Italian sausage, casings removed
- 1/2 lb ground turkey
- 1 teaspoon +1/4 teaspoon salt, divided
- 1/2 teaspoon + 1/4 teaspoon ground black pepper, divided
- 2 15-ounce cans tomato sauce
- 32 ounces beef stock
- 4 cups water
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 5 cloves garlic, minced, about 1 tablespoon
- 1/2 medium onion, diced
- 1 16-ounce package wide egg noodles
Instructions
- In a large skillet, season the sausage and ground turkey with 1/4 teaspoon each salt and pepper; brown
- In a 6-quart slow cooker, combine the tomato sauce, beef stock, water, oregano, basil, garlic, onion and remaining teaspoon salt and 1/2 teaspoon ground black pepper
- Once the meat is browned, add it to the slow cooker
- Cover and heat on high for one hour {just to get thing rolling}; place slow cooker on low and continue to cook and additional 2 hours
- Add noodles during remaining 30 minutes of cooking
- Garnish with shredded mozzarella cheese and serve with garlic bread, if desired
