This recipe is extremely versatile….you can double it, triple it, or half it. I’ve even been know to eat it plain as a healthy lunch alternative.
This salad is great for using my perfect roast salmon recipe!
Salmon Salad

Yields 4
Ingredients
- (4) 6 ounce salmon fillets, roasted
- 6 celery stalks
- 1/4 cup cucumber
- 1/4 cup yellow pepper
- 1/2 large red onion
- 2 1/2 tablespoons fresh dill (or 2 teaspoons dried dill)
- 4 tablespoons capers
- 4 tablespoons white wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Using your hands, break the salmon down into bite-sized pieces
- Mix together the remaining ingredients and chill for at least two hours
- Serve with pita chips or crackers
