Breakfast tacos are a delicious way to enjoy Mexican food for breakfast! This easy breakfast recipe features fried corn tortillas piled high with hash brown potatoes, fluffy eggs, bacon, sausage, ham, and lots of cheese! Hearty and delicious!
The first time I tasted these breakfast tacos I was speechless.
Yes, they are that good.
That was nearly eleven years ago, and you know what? They taste just as good as I remember them!
When I was about eight months pregnant with Jr, I worked at a small Mexican restaurant in southern Arizona. This is where I had my first taste of this delicious breakfast tacos recipe.
These tacos are loaded with three kinds of meat, eggs, cheese and then some!
They take a little extra time to make, but are so worth it!
I thought it only fitting that I name them after the owner of that small restaurant.
My husband and kids love these tacos, and they are a common request. I usually reserve making them for special occasions or as a treat on the weekend.
Be sure sure to serve them with my spicy homemade salsa recipe. It will give your breakfast tacos added flavor that everyone will love.

Yields 4-6
Ingredients
- 1/2 package hashed brown potatoes
- 6 eggs, scrambled
- 4 slices of bacon, cooked and cut into bite-sized pieces
- 4 sausage links, cooked and cut into bite-sized pieces
- 2 oz of cooked ham, heated and cut into bite-sized pieces
- 8 corn tortillas
- Shredded Colby Jack cheese, sour cream and hot sauce, if desired
Instructions
- In a large pan,cook hashed browns according to package directions; set aside
- In a medium pan, heat meats until warm
- Add eggs, cook until done
- To heat tortillas, wet slightly with water {this helps to prevent breaking} and heat on flat skillet or in pan
- Divide cooked egg mixture and hashed browns evenly among tortillas
- Garnish with shredded cheese, sour cream and hot sauce, if desired
