Raspberry Iced Tea Granita with Whipped Cream and Fresh Raspberries is perfect for a refreshing summer treat.
Now that the weather is pretty warm here in Tucson, {OK, who am I kidding, it’s downright hot!}, we’ve been doing a lot of grilling lately. Mark usually man’s the grill, since I haven’t quite mastered it yet.
The other day we decided to have burgers and corn on the cob for dinner, so I headed to the store. I had a few non-food items on my list as well, so I went to the one place I can always count on to have everything I need- Walmart.
After hitting the produce section, I started down the main aisle and totally stopped in my tracks. They had a huge display of Keurig K-Cups, which we love, and several new #BrewOverIce varieties that I had not seen before. We use our Keurig everyday to brew our morning coffee, but we also love a good glass of refreshing iced tea, too.
The display was in the main aisle, across from the coffee aisle. I love that the K-Cups are in the coffee aisle, so I don’t have to hunt them down all over the store. However, with this huge display right smack in the middle, I didn’t even have to venture into the coffee aisle.
Now, I don’t know about you, but I’m not a fan of having to lug a case of bottled ice tea from the cart to my car, and from the car into my house. Did you know you can get Snapple #BrewOverIce for your Keurig? I picked up a box of the Diet Lemon Iced Tea and a box of the Raspberry Iced Tea. Not a tea fan? That’s OK, because there are plenty of other varieties available as well.
Looking at the package more closely, I discovered you need to brew your tea into a plastic cup, which totally makes sense, because if you use glass it can break, and you could severely injure yourself. Now, I have tons of the large insulated cups with straws, but nothing that would fit under my Keurig.
Did I let that stop me? Heck, no, I was at Walmart and I knew I’d find something that would fit my need. I picked up the cutest plastic cup that looks just like a mason jar, complete with handle, lid and straw – swoon!
On the way home, I started thinking that there must be other was, besides just drinking it, that I could enjoy my tea. By the time I got home, inspiration hit, and I got right to work.
The #BrewOverIce K-Cup varieties can be made using either the 6 oz or 8 oz setting on your Keurig, but for this recipe I brewed two of the Raspberry tea K-cups on the 8 oz setting {for a total of 16 oz of brewed tea} in a plastic measuring cup. Next, I took a second measuring cup and filled it with 1/2 C ice and then poured 1/2 C of the hot tea over it.
Next, I poured the 1/2 C of cold tea into a small bowl, added two packets of gelatin and let it set for one minute until it was dissolved. Once dissolved, I added the remaining tea, which was hot, and stirred for about 5 minutes until it was mixed well.
Once it was well combined, and cooled, I poured the mixture into a glass 9 x 11 baking dish and put it in the freezer. After about 30 minutes, I went in and, using a fork, stirred it well. I repeated this after another 30 minutes.
You want the gelatin to look granulated.
Now, of course, while I was working on dessert, I couldn’t forget about the Diet Lemon Tea I had purchased, so I brewed a cup for Mark to enjoy while he was manning the grill. Don’t you just love the plastic mason jar cup?
Once we had finished our meal, which was fabulous, especially the corn on the cob, I assembled dessert. Simply divide the granita into serving dishes and top with whipped cream and fresh raspberries.
They were so light and refreshing, it’s no wonder they were gone in a flash!

Ingredients
- 2 Snapple Raspberry Iced Tea K-Cups
- 2 packets gelatin {I used Knorr}
- 2 C water
- Whipped cream and fresh raspberries for garnish
Instructions
- Brew the two Raspberry Tea K-cups on the 8 oz setting of your Keurig {for a total of 16 oz of brewed tea} in a plastic measuring cup
- Take a second measuring cup and fill it with 1/2 C ice and pour 1/2 C of the hot tea over it, so it gets cold
- Pour the 1/2 C of cold tea into a small bowl
- Add two packets of gelatin and let it set for one minute until dissolved
- Once dissolved, add the remaining tea, which should still be hot, and stir for about 5 minutes until mixed well
- Poured the mixture into a glass 9 x 11 baking dish and put it in the freezer
- After about 30 minutes, using a fork, stir it well; repeat this after another 30 minutes, as you want the gelatin to look granulated
- Divide the granita into serving dishes and top with whipped cream and fresh raspberries
