Very similar to classic rice pudding, orzo pudding is made with pasta, which, as many of you already know is an addiction of mine. We eat it all the time, so naturally, I found a way to include it as part of our holiday meal. No side dish here, though, I made dessert. I’ve been a fan of rice pudding since the first time I tried it, and when I saw this recipe on the Pasta Fits website, it inspired me to make pumpkin spice orzo pudding, where cinnamon, nutmeg and ginger add fabulous Fall flavors. Relatively easy to make, this pudding is super creamy and totally delicious.
In addition to finding some amazing recipes on the Pasta Fits website, I’ve also learned a few things that I never knew before. The website offers cooking tips, contests, pasta facts and my favorite, a pasta shape directory that explains which pasta, sauces and dishes compliment each other best, giving you the most satisfaction when preparing and enjoying your pasta meal.
Aside from a sort of family tradition, I love pasta for many reasons –
- it’s perfect for any family, since it’s quick-cooking and easy to make, and also inexpensive, which means it’s budget friendly
- pasta goes great with veggies, fish and poultry & lean meats, which are high in fiber, contain heart healthy oils and packed with protein {respectively}
- it’s packed with complex carbs, which fuels your muscles and brain, and with all the holiday shopping you’ll be doing, you’re going to need to stay on your toes
This year, why not incorporate pasta in unique dishes {like my orzo pudding} that are simple to make? This allows young ones to help, which is always fun for creating lasting memories, especially during the holidays. Watch their faces light up as they proudly share with family and friends how they helped to make the simple and unique dish!
First, cook about 1/3 of a 1 lb box of orzo according to package directions, {which yields about 3 1/2 cups of cooked pasta}, drain and rinse it.
Next, combine the orzo, milk, cream, sugar & salt and cook until it’s nice and thick.
Stir in the vanilla, cinnamon & pumpkin spice and allow to cool for a few minutes before transferring to serving dishes. Serve warm.
