If you know me, then you know how much I love pasta. I grew up having it twice a week and have continued to make it regularly for my own family.
Since I’m always on the lookout for new pasta dishes, I have completely fallen in love with the Pasta Fits website. I have discovered so many fabulous recipes there, including this one pot pasta dish that I’m sharing with you today.
It’s packed full of flavor & melty mozzarella cheesy goodness and is ready in only 30 minutes. The fact that it’s made in one pot means less cleanup time, and, since pasta is a complex carbohydrate, it’s the perfect fuel for your brain and muscles- something every active family needs.
So, why do I love pasta so much? Well, for one thing, it tastes good. It’s also inexpensive, so it’s totally easy on the budget, plus, it cooks in just 10-12 minutes {some pastas take even less time}, making it a great side dish.
This one pot pasta dish was incredibly easy to make, even my granddaughter was able to help me prepare it. She had the job of picking the fresh rosemary off of the stems for me, and did an awesome job.
There are really only a few steps to this meal, which makes it even more incredible. Simply add all ingredients to a large pot or deep skillet. {See how to peel garlic the easy way}
Once it begins to boil over medium-high heat, cover and cook, stirring occasionally so the pasta doesn’t stick together. While pasta is cooking, cut up mozzarella.
Once pasta is tender, stir in the mozzarella and cover again, letting sit until the cheese is melty.
You’ve now got a fabulous meal for your family.

Yields 6
Ingredients
- 16oz box linguine
- 1 15oz can diced tomatoes (with liquid)
- 3 tablespoons fresh rosemary
- 1 small white onion (sliced julienne)
- 6 cloves garlic (sliced)
- 4 cups chicken broth
- 2 tablespoons olive oil
- 8 oz mini mozzarella pearls {I cut up an 8 oz fresh mozzarella ball}
- 12 frozen turkey meatballs {I used meatballs made from beef and pork}
- 1/4 tsp pepper
- salt to taste
Instructions
- Place all ingredients in a large pot or large, deep sauce pan
- Bring mixture to a boil then cover, reduce heat and cook an additional 10-12 minutes, stirring occasionally
- Make sure not to overcook the pasta; most of the liquid will be absorbed
- Once the pasta is cooked, remove from heat and slowly fold in the mozzarella
- Cover and let sit for 3 minutes so the cheese can melt
- Serve immediately.
