Hi Everyone!!
I’m Gina Kleinworth from Kleinworth & Co. I’m SUPER EXCITED to be here posting today at Rachel’s place & sharing one of my favorite things we make for breakfast- Cinnamon Coffee Cake. I have been on a kick lately to see how long I can go without buying pre-packaged breakfast items for my kids (cereal, pop tarts, etc.) I am happy to report that I have gone almost 2 months since we purchased any of those things. Recipes like this one I am sharing today certainly help with that.
I have a huge passion not only for baking & also photographing the things I make. I find myself getting in the kitchen just to have an excuse to get in the studio & photograph something delicious. My kids & the guys at the fire house love it because once I have created something, photographed it & had a couple bites- I’m ready to share. I love bringing joy to others through food. This is passed down from my grandmother. She believes that she best shows her love by cooking for people. I do that too- only I also show my love to all my readers & supporters by sharing my recipes with them on my little place on the web.

Ingredients
Cake
1 cup milk (or milk substitute)
1-1/2 tsp cinnamon
1 tsp salt
2 tsp baking powder
2 cups all-purpose flour
1 egg
6 tbsp butter
3/4 cup sugar
Streusel
1/4 cup sugar
2 tsp vanilla
1 tbsp flour
2 tbsp melted butter
1 tsp cinamon
Directions
Preheat oven to 350 degrees. Spray 9″ glass baking dish with cooking spray.
In small bowl- mix together flour, baking powder, salt & cinnamon. Set aside. In mixer bowl- bream your butter & sugar. Beat in egg. Add in dry mixture- slowly. As it’s mixing- slowly pour in milk.
Combine all streusel ingredients & whisk until combined.
Pour 50% of the cake batter in pan. Drizzle in 50% of the streusel mixture- swirl with a knife a little bit.
Top with remaining cake batter & then with the remaining streusel mix.
Bake 35-40 minutes. Remove & allow to cool completely before adding icing.
Icing
1 cup confectioners sugar
splash of milk
Whisk until combined. Drizzle over each piece of coffee cake.
So there you have it- a favorite breakfast from our kitchen. I hope it will become a favorite for your family too.
