Pink lemonade poke cake is a homemade cake with a tangy filling that tastes just like pink lemonade. An easy poke cake recipe, perfect for your next gathering.

I recently joined the ‘Make it Mine’ club. It’s really very cool, and I’m pretty excited about it. A couple of times a month, a theme is chosen.
All the participants ‘make it theirs’ by putting some kind of twist on that simple theme. The recipe the members create can be a drink, a treat, a dip, whatever they choose.
To kick off summer, the theme this time around is Pink Lemonade.
My first thought was to make a drink, but I felt that I had done enough of those lately. Besides, the lemonade is already a delicious drink on its own… no twist is required. I love to bake and I love cake, especially poke cake, so that’s what I decided to create.
The vanilla cake is dense and sweet, a perfect compliment to the tartness of the pink lemonade. It’s made in a 9 x 13 pan, so it’s great for get-togethers, pot lucks or simple family dinners. Plus, this easy pink lemonade cake bakes up in no time.
EDITED: Sadly, the Make it Mine Club, started by Christine at Cook the Story, is no longer together. Maybe one day it will start up again.

Yields 12-16
Ingredients
- 1/4 C shortening
- 1 C sugar
- 2 Eggs
- 2 C flour
- 1/4 tsp salt
- 2 1/2 tsp baking powder
- 1 C milk
- 1 tsp vanilla
- 1 small box lemon flavored gelatin
- 1 C pink lemonade {hot, but not boiling}
- Topping
- 1 packet Betty Crocker Frosting Creations Pink Lemonade flavoring
- 1 8 oz tub whipped topping
Instructions
- Cream the shortening, sugar and eggs
- Add remaining ingredients and mix until incorporated, about two minutes
- Bake in a greased and floured 9 x 13 pan at 350* for 20 min
- Let cool; poke random holes 1-inch apart in cake with wooden skewer
- Mix lemon flavored gelatin and pink lemonade in a small bowl; pour over cake, being sure to get gelatin in holes
- Let cool
- For the topping-
- Fold flavor packet into whipped topping.
- 'Frost' cake; chill in fridge until ready to serve
The texture looks moist, and as usual I just love the pinky color :)
