Lemon pudding poke cake is an easy dessert recipe, with layers of moist vanilla cake, creamy lemon pudding, and fluffy whipped cream.
When the kids were younger, we didn’t have a lot of money. Despite the fact that we were both working, we always seemed to just ‘get by’.
Since then, we have been blessed with our own business. Thankfully it has done very well, and we haven’t had to worry too much about whether or not it would be enough to sustain us. Mark worked the business and I worked retail. {yay, not} Five years into it, we made a big decision. I was able to quit my 55+ hours-a-week retail management job to be a stay at home mom. That was nearly three years ago.
The kids are getting older and have already started to leave the nest. Our son is married and has two beautiful girls. Our oldest daughter will be moving out {again} soon, I hope. Another daughter, who is a high school senior, has plans to join the Army. So, potentially, within the next year we could have just our youngest son and daughter at home with us {ages 10 and 16, respectively}.
With the older girls working, my not working, and Mark having more free time {yay for supervisors we can trust!}, we get to have more alone time. And because the cash flow is better, we are able to do things we wouldn’t have been able to do in the early years. Like take the dogs to get a bath. {I know, you were expecting something more romantic, weren’t you?}
We dropped Hank and Luci off early afternoon, went and had a nice lunch and ran some errands. Now, Luci is kind of needy. She needs plenty of attention. Like, more than the average dog. And she’s smart. A little too smart. Last year when we were in Hawaii, the sitter had put them in their crates, and before she had left, Luci managed to break out of hers. She had never done that before and didn’t do it again. Until the last time we took her for a bath.
She broke out of their kennel three times, then proceeded to find a nice puddle where they wash the dogs and lay right in it. So, when we dropped them off this time I reminded/warned the groomer of what happened the time before. Near the end of the last errand, I called to check to see if they were ready, or would be soon. The groomer proceeded to tell me that Luci had gotten out. This time only her tail got wet, but she chewed the groomers shoes!

When Mark returned home from picking them up, I asked if he replaced the shoes. He promptly said, “No, she had fair warning”. Which is true, but I did feel bad. I suppose I could have at least taken her a piece of this Lemon Pudding Poke Cake. Because it would have made everything OK. Seriously. Because it’s that good.

Ingredients
- 1 box vanilla cake mix, prepared as directed for a 9 x13 pan
- 2 3.4 oz boxes instant lemon pudding
- 2 8 oz containers of whipped topping
- 1 12 oz package lemon creme cookies
Instructions
- After cake cools, poke holes in the top with the round handle of a wooden spoon
- Prepare pudding according to package
- Pour pudding over cake, being sure to get it in the holes
- Chill cake until pudding is set {about 15-20 min}
- Top with whipped topping
- Crush cookies and sprinkle on top of cake
- Store covered in refrigerator. Lasts about one week
