In case you hadn’t guessed, I love food. I mean, I really love it. You know those people who make all sorts of moaning and sighing sounds when they take a bite of something really delicious? Yep, that’s me.
Unfortunately, it’s gotten the better of me, weight wise, that is. But, no matter how much I would love to be back down to my ‘normal’ size, I just can’t seem to go all-out-full-force with exercise and healthy eating.
But, here’s what I can do:
- eat sugary foods less often and raw & whole foods more often
- park further away from the store
- take the stairs
- walk the dog more often
- make desserts with less calories
- drink more water
With the help of these little changes, I can feel better about myself and live a healthier lifestyle without having to sacrifice all of the foods I love.
The other day, I was craving some bread pudding, which is one of my {many} favorite desserts. The recipe calls for a cup of sugar and lots of whole milk & heavy cream. I simply substituted 2% milk for the whole milk. While searching for something I could use to substitute for the sugar and heavy cream, I remembered I had a bottle of International Delight coffee creamer in the fridge. It worked perfectly. And of course I had to toss in a few caramel bits for extra flavor!
The result was a rich and gooey bread pudding packed with sweet caramel flavor, with less calories and fat, and I’m already thinking of other fabulous desserts and drink I could make with it, too.

I love not having to sacrifice flavor for fewer calories! Ingredients
- 6 egg yolks
- 2 cups milk {I used 2%}
- 1 cup International Delight Caramel Creme Creamer
- 1/2 teaspoon sat
- 1 cup caramel bits
- 1 large french bread loaf
Instructions
- Preheat oven to 375 degrees
- Coat an 8x8 baking dish with non-stick cooking spray
- In a large bowl, whisk egg yolks, milk, salt and creamer; set aside
- Tear french loaf into 1" pieces and mix into cream mixture, combining well
- Add caramel pieces
- Spread bread mixture into 8x8 dish
- Bake for 45-55 minutes, or until a knife inserted in the center comes out clean
- Serve warm
