I won’t lie, when it comes to packing school lunches, I’m all about convenience. Packaged cookies, crackers, pudding cups- you get the idea. However, when I discovered Little Green Pouch, I thought some homemade pudding was in order.

- It’s freezer safe – which means I can send my kids to school with smoothies that will be thawed in time for snack.

Rich and creamy chocolate pudding, perfect for dessert or even a snack.

Yields 3
Ingredients
- 1/2 cup sugar
- 1/4 cup corn starch
- 1/4 teaspoon salt
- 3 cups milk
- 2 tablespoons butter
- 3/4 cup chocolate chips
- 1 teaspoon pure vanilla extract
Instructions
- In a large saucepan, combine sugar, corn starch and salt
- Over medium heat, stir in milk and butter gradually; stir constantly until boiling
- Boil 1 minute, stirring constantly
- Remove from heat and stir in chocolate chips and vanilla until well blended
- Spoon evenly into dessert dishes
- Refrigerate until chilled
