With just 5 ingredients, this homemade biscuit mix is perfect for whipping up shortcake, scones, pancakes and even breakfast bread!
If you love recipe shortcuts that have delicious outcomes, then this homemade biscuit mix is for you. There are so many recipes that can be created from just this one mix. With a little tweaking here and there, you can have a delicious lemon blueberry shortcake, pancakes and even scones.
The recipe itself consists of mainly just combining all of the ingredients together, however, it does take some time because of the method used. I assure you, though, it’s not labor intensive and you’ll be happy you made this.
Once you’ve got all of your ingredients in a large bowl, you simply blend them with a pastry blender. Don’t own a pastry blender? No worries! You can simply use two butter knives- holding one in each hand, crisscross them, then pull them away from each other in opposite directions, similar to how you would cut your steak with a fork and a knife, only both utensils are moving.
Once the mixture resembles coarse cornmeal, put it in an airtight storage container and and keep it in the refrigerator. It will last up to one month, but, my guess is you’ll use it up before then.
Obviously, the easiest biscuits in the world are drop biscuits, since there’s no rolling involved. And you know me, the easier the better.
To make the drop biscuits, all you need to do is combine 2 cups of the homemade biscuit mix and 2/3 cup water, drop by spoonfuls onto a baking sheet and bake. BAM. You’ve got homemade biscuits.
They’re fabulous with butter and honey!
