Cooler weather means jeans, scarves, and no more flip flops. Well, mostly. When you live in sunny Southern Arizona, you can pretty much wear flip flops 8-9 months out of the year. I love to be able to finally wear boots, which I have several pairs of, and, am convinced will have for many years to come, since I rarely get the chance to wear them.
Cooler weather also means stews and chilis. Lately, I’ve fallen in love with squash. I made this curried slow cooker beef stew with acorn squash and roasted butternut squash & potatoes. My family loved both.
If you’ve never tried squash before, it’s a must! I’ll admit, I was pretty leery of all squash myself, until I tried it. Acorn and butternut squash are my favorite, because they taste a lot like potatoes, which is a plus in this house.

Hearty Squash and Green Bean Chili

Yields 6
Ingredients
- 1 pound lean ground beef
- 1 Butternut squash, seeded and diced into 1/2-3/4 inch pieces
- 2 15 ounce cans tomato sauce
- 1 14 ounce can french style green beans
- 1 Tablespoon hot New Mexico chili powder
- 3 garlic cloves, minced
- 1 small-medium sized onion, diced OR 1 teaspoon onion powder
- 1 teaspoon salt
Instructions
- Heat tomato sauce in a large saucepan on medium heat
- Brown meat, garlic and chopped onion {if using fresh rather than powdered} in a large skillet; drain
- Add browned meat, squash, chili powder, onion powder {if not using fresh onion} and salt to tomato sauce
- Cover and simmer on low until squash is tender, about 1 hour
- Add canned green beans and heat an additional 5 minutes, or until green beans are warm
- Top with sour cream and green onions, if desired
