
It’s official. I live in hell. It was 106* yesterday and I didn’t leave the house once. Nope, I played it smart and stayed inside all day long. Not even our pool could tempt me to go outside with it’s cool 76* water. There was no way I was about to bake, either. In fact, I stayed as far away from the kitchen as I could get.
I read a little, I sewed a little. It felt good. I even cleaned a little {not my most favorite thing to do, but I’m getting better}.
For a girl who wants to stay cool on a scorching day, the only sane thing to make for dinner is anything that can be made on a grill. And a salad, because there’s no actual cooking involved.
These Green Chili Burgers are fabulous and require very little preparation. They cook in less than 20 min on the grill, plus the clean-up is minimal.
Simply cut foil squares just larger than your burger patties so that you can wrap them in a neat little package. Lay a patty in the center and top with slices of onion & potato and season with salt & pepper.
Next, top with a whole green chili {I cut mine in half so that it would lay flat}. To wrap your patty in the foil, bring up opposite sides of the foil together and fold. Repeat with remaining sides.

Ingredients
- 6 sheets of foil
- 6 Beef burger patties
- 1/2 Medium onion, thinly sliced
- 1 Medium potato, sliced in 1/8" slices
- 6 Whole green chilies, fresh or canned
- Salt and pepper to taste
- 6 Hamburger buns
Instructions
- Lay a beef patty on top of each piece of foil
- Top patties with onion and potato slices; salt and pepper to taste
- Top with green chilies; wrap foil around patties to make a foil 'pouch'
- Grill on medium heat for about 15 minutes, checking after 10, or until burgers are done and potato is tender
- Serve on hamburger buns with favorite toppings

I grilled our burgers on medium heat for about 15 minutes, checking at 10 minutes.

Potato on a burger in intriguing me, I have never tried it, or even heard of it, but I can see how it would be good!
