This recipe belonged to my husband’s grandmother. It was passed down to me by Aunt Val. And I have to say that I will be ever grateful to her for it. {I love you, Aunt Val!}
But, OK, I’ll admit it, the first time this snack cake was introduced to me I wasn’t so sure about it.
It has Miracle Whip in it.
*GASP*
Yes, I know that’s what you’re all thinking.
Because in this day and age everyone is looking to steer clear of fats & oils and the like.
But the truth is, regular Miracle Whip has less calories and fat than light mayo. And let’s not even get into the amount in oil + eggs you would normally use. *shudder*
Not to mention more flavor.
And let me just tell you that it gives this cake plenty of it!
Yes, I could have used the light Miracle Whip, for even less fat and calories, and it would have been just as tasty.
But like the old saying goes, “Why mess with a good thing?”
Seriously, this is my all time favorite cake. And there isn’t even any frosting on it!
In fact, someone once suggested that I frost it and I think the look I gave them caused a little bit of brain damage.
No, seriously, it’s totally against the rules.
I will, however, allow a light dusting of powdered sugar.
You can thank me later.

A delicious chocolate snack cake that is moist and tasty!

Yields 12
Ingredients
- 2 C. flour
- 1 C. sugar
- 1/4 C. cocoa powder
- 2 tsp baking soda
- 1 C. Miracle Whip
- 1 1/2 C. water
- 1 tsp vanilla
Instructions
- Mix all ingredients together in a large bowl {I used a whisk}
- Bake in greased & floured 9×13 pan {I used Baker’s Joy baking spray}
- Bake at 350* for 40 min, or until toothpick inserted in center of cake comes out clean
- Cool in pan on wire rack
- Serve dusted with powdered sugar, if desired {But no frosting!}
