This is actually one of my family’s recipes. My partner never sent me a recipe. I’ve never made these before though. I halved the recipe using one egg plus an egg yolk. I used a teaspoon sized cereal spoon to drop the dough onto the cookie sheet. They turned out amazing. They’re like little cakes. I ate three of them while glazing. I just dipped the cookies into the glaze & scrapped some of the excess off with a butter knife. I added the sprinkles to make them more Christmasy.

Yields 8-10
Ingredients
- 1 cup of flour
- 2/3 cup brown sugar lightly packed split (use 1/3 cup in the crust and 1/3 in the cookie)
- 1/2 cup soft butter
- 1 egg
- 3 Tbl maple syrup
- 1/2 cup chopped pecans
- 1/4 cup coconut
Instructions
- Preheat oven to 350 degrees
- Mix flour and 1/3 C of the brown sugar
- Once mixed, add soft butter until dough has formed then press into an ungreased 8x8 baking dish. Stab with a fork and bake for 20 min
- Remove and cool slightly.
- Mix egg, remaining 1/3 C brown sugar, syrup and pecans
- Pour mix over crust and return to oven and bake until firm 12-15 min
- Remove from oven and cut with a knife right away to prevent sticking to pan
- Sprinkle on coconut and allow to cool completely
- Cut into 1 inch squares and serve
