Just 4 ingredients makes this tortellini soup the perfect meal at the end of a busy day!
It’s a known fact that I am, and always will be, addicted to pasta. Actually, I think it’s in my DNA. I am Italian on my paternal grandmother’s side and it shows. Growing up, I can remember my mom making spaghetti at least twice a week. Sunday afternoon after church and Wednesday night for dinner.
During the spring each year, my great grandmother would come and stay with my grandmother, her daughter, for a few months. She lived in Buffalo, so, clearly she was waiting for the snow to thaw. We would always go to my grandmother’s house for what we called ‘homemades’. It was the cavatelli pasta that my great grandmother used to make with her hand-crank pasta machine.
I still love pasta, and we have it about once a week for dinner, in various ways. And, on special occasions, I make homemades using the same pasta machine my great grandmother used. Unfortunately, homemade pasta isn’t the quickest dish to make, and, it takes a village. Literally. And that explains the reason they’re saved for special occasions.
Enter this 4-ingredient tortellini soup. The secret? Ragú® pasta sauce. I have been using Ragú® since my husband and I first got married, some 24+ years ago. It’s quick, it’s easy, and it’s super delicious. We love the Traditional red sauce for spaghetti and meatballs, the Alfredo sauce for when my daughter is craving Chicken Alfredo, and the Four Cheese is perfect for this tortellini soup.
I found my Ragú® Four Cheese sauce in the Italian section at Fry’s, near the pasta.
I’d been having a busy day, so I was super excited about the frozen cheese tortellini I found. The makings of a great recipe, for certain.
It has finally started to get chilly in the evenings, so, I thought soup would be the perfect dinner. The result is this deliciously easy , and cheesy, four cheese tortellini soup. And, it just may be our new favorite way to use Ragú®.
