I think I could live on appetizers. I don’t work outside of the home, {to be honest, I sometimes wish I still had my 50-60 hr per week retail management job}, so you’d think I’d make myself a decent lunch. Nope, not this girl. I’m a snacker. I usually have toast and coffee for breakfast, or a muffin if we have any, and on rare occasion, an egg. Lunch is mainly chips, crackers, cheese, or leftovers, if there are any. No, not really. Leftovers usually get thrown away, since I forget they’re there and no one else ever wants them.
Truth is, I’m usually so wrapped up in what I’m doing that I forget to eat, so I find the nearest piece of food and shove it in my mouth.
If it were up to me, we’d all have cheese, crackers, deli meat and wine for every meal. Not the kids, of course. They’d be on their own. Seriously, I’m tired of cooking for those people. Who invited them, anyway?
Even when Mark and I go out to dinner, I will sometimes just order an appetizer and have that instead of a meal. Most entrees are too big anyway, and I end up taking most of it home. And we all know where that leads- the trash.
Since crackers and chips aren’t the healthiest to be eating all the time, this easy taco dip recipe helps me to at least eat some veggies.
I made it with 0% fat Greek yogurt, because Lord knows I need to cut back on fat, but it would work equally well with a higher fat content regular yogurt or even sour cream.
