Between summer temps rising and the kids out of school & bored, things are really starting to heat up at my house. They’re already tired of movies, swimming and laying out, so they come to me for entertainment. Soon after they wake up in the morning, I know they’re going to be hitting me up for ideas, so I started drinking smoothies with almond milk. I figured my body could use the fresh fruit and wholesome goodness {not to mention less calories} of the almond milk, in preparation for the bombardment. They tasted so good, I decided to try other almond milk recipes.
Popsicles are perfectly fitting for summer, so that seemed like a good place to start. I’ve known about some of the benefits of almond milk {like being dairy, gluten and soy free} but only just now started using it. On a recent trip to Safeway, I discovered two new flavors of Silk Almond Milk while I was in the dairy section at the back of the store- Almond Coconut Blend and Almond Milk Protein + Fiber.
As soon as I saw the Almond Coconut Blend, I knew exactly what I wanted to make with it. In fact, I even had everything I needed.
Just three ingredients, pineapple, AlmondCoconut Blend almond milk and agave nectar. I like to use agave, so I bought the unsweetened milk. At just 35 calories per serving, {only 50 for the sweetened} I can afford the agave calories.
Just toss everything in the blender for about 10-15 seconds. You don’t want to totally breakdown the pineapple, pieces of it in the pops are part of the fun.
Pour into popsicle molds and freeze for a good three hours.
When the pops were freezing, I went to my local craft store and bought the kids a tie-dye kit and some white t-shirts. While they’re having fun creating, this mama is going on a tropical vacation. OK, it’s only my backyard, but these Pina Colada Pops sure make it feel like a vacation. Now, where’s that cabana boy?

- 1 C pineapple chinks, drained
- 1/2 C Silk AlmondCoconut Blend milk
- 1 Tbsp agave nectar
Instructions
- Blend all ingredients together
- Freeze
- Enjoy
