Dinner. Sometimes it’s the bain of my existence. Even though I’m mainly a food blogger, as a wife and mom, I still struggle with the age-old question of “What’s for dinner?” I imagine you do, too. With six people living in our house, and as many different schedules, it’s not easy finding a meal that everyone will like and reheats nicely. I do have a few recipes that everyone loves, but, after a while, they certainly get boring.
What I need, is a sort of ‘base’ recipe that I can use to create a few completely different meals with. Yields 6-8
Ingredients
- 1 6 ounce box Horizon Macaroni & Cheese with Mild Cheddar Cheese
- 1/2 pound ground turkey
- 1/8 cup taco seasoning
- 1/8 cup water
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced green chilies
- 1 16 ounce pinto beans, drained and rinsed
- Sour cream and extra green chilies for garnish, if desired
Instructions
- Prepare mac n' cheese according to directions, set aside
- Meanwhile, in a medium skillet over medium-high heat, brown ground turkey
- Stir in taco seasoning and water, mixing to combine
- Simmer for 5 minutes
- Add shredded cheddar cheese, diced green chilies and pinto beans to prepared mac n' cheese
- Mix gently to combine
- Serve in bowls and garnish with sour cream and additional green chilies, if desired
