If I know I’m going to have a busy day, I like to throw a meal together in the slow cooker. It gives me peace of mind knowing that dinner is cooking while I’m out running around.
Some days, however, are just unpredictable. Last minute errands, unexpected trips to urgent care, and stores that are busier than usual when I’m out shopping. Those are the days I need a list of easy meals that allow me to simply turn the oven on and pair it with a fresh salad.
The other day, was that kind of day. I had been running around town looking for decorations for Mark’s surprise 50th birthday party, and it took much longer than I had expected. So, while I was at Walmart getting candy, water bottles and paper goods for the party, I swung by the pizzas in the freezer section. One can never go wrong with pizza.
Looking at all my choices, everything seemed a little ‘same old-same old’, but, then I spotted the California Pizza Kitchen line.
There were several options, but I thought the BBQ Chicken sounded the most interesting. I picked up a couple of them and popped them in the oven as soon as I got home. While they were baking, I threw a fresh green salad together to complete the meal. Dinner was on the table in less than 30 minutes. As far as easy meals go, this is definitely near the top of the list.
