
So, when you think of easy, what does that mean to you? Okay, okay, I know what you’re all thinking, but that’s not what I meant. Seriously, people! I mean, when someone says that something is easy to do or to make, just how easy do you expect it to be?
Like all this techie stuff. Mapping buttons. Why do they need a map, are they lost?
And artwork for business cards. You need a ‘flattened’ copy? Hmmm, wouldn’t they look better if they weren’t all smashed down? Like puffy even? Ooo, puffy business cards! How awesome would that be?
HTML. Is that another way of saying SMH or TTYL?
Sorry, guys, but that stuff just doesn’t seem easy to me. Oh, I can edit a photo and add a pin it button just fine. But I swear some of this other stuff just blows me away.
Know what else blows me away? This Easy Chocolate Mousse. So rich and so creamy. And totally easy!
Seriously, though. It really is easy. Don’t believe me? Okay, I’ll prove it.

Easy Chocolate Mousse
A rich and creamy chocolate mousse

Yields 6
Ingredients
- 1 3/4 C semi sweet chocolate chips
- 1 1/2 C boiling water
- 1/4 C + 2 T prepared coffee
- 1 tsp vanilla
- 4 eggs
Instructions
- Melt 1 3/4 C semi sweet chocolate chips
- Set aside
- In a blender {I used my Vitamix- love that thing!} add 1 1/2 C boiling water, 1/4 C + 2 T coffee, 1 tsp vanilla, 4 eggs and melted chocolate
- Blend well {It will be totally liquefied at this point, but don't worry}
- Pour into six 8oz glass jars {I used the short ones with the wide mouths}
- Let cool for about 15 min before putting on lids and refrigerating for 3 hours
- Top with whipped cream and serve
