This easy chicken salad recipe is perfect for picnic sandwiches, eating with crackers by the pool, or as an appetizer for entertaining your summer guests!
When I think of summer, my mind goes straight to recipes that are quick and easy to make. No stove, {preferably} no grill, and not a ton of work involved. Working ‘part-time’ 35+ hours a week, I’m already tired at the end of my day, and the hot summer heat here in Southern Arizona doesn’t make it any better.
I crave meals that are cool and refreshing, and salads fit the bill perfectly. In fact, July is the perfect month for the 12 Bloggers group to bring you 12 fresh and delicious summer salads. Yields 6-8
Ingredients
- 3 cups cooked chicken breast, diced or shredded
- 1/4 cup + 2 tablespoons chopped pecans
- 1/4 cup + 2 tablespoons dreid cranberries
- 1 cup mayonnaise
- 1 teaspoon salt
Instructions
- Combine all ingredients in a medium bowl and mix until well incorporated
- Serve as a sandwich, in lettuce cups, or eat with crackers right from the bowl
