
These Easy Cheater Enchiladas are on the table with minimal effort and taste like homemade.
When I was a girl, I can remember my mom making enchiladas. She would heat oil in a pan, dip the tortillas in it, fill them with cheese or meat and lay them in a pan. It was so much work, but they were totally worth it. Wanting to learn how to make them, I helped her on a few occasions. It was trickier than I thought. If you didn’t dip the tortillas long enough, they wouldn’t roll very well and sometimes cracked. If you dipped them too long, they simply fell apart. Definitely an art form.
After I got married, I would sometimes make them for my small family. However, as our family grew and activities became more abundant, I made them less and less. I needed quick and easy, and they were just too time consuming.
Several years ago, I had an epiphany. Going off of Mark’s ‘work smarter not harder’ motto, I discovered a way to make enchiladas without all the hard work. They come together quickly {we’re talking 5 min} and are ready to eat in less than 45 min. Plus, they taste fantastic!
Easy 'Cheater' Enchiladas

Yields 4-6
Ingredients
- 20 frozen beef or chicken taquitos
- 28 oz can of your favorite enchilada sauce {I use Macayo's}
- 1 to 1 1/2 C shredded Mexican cheese blend
Instructions
- Preheat oven to 350*
- Put 1/2 C of enchilada sauce in an 8 x 8 baking dish, being sure bottom is covered
- Layer with 10 taquitos, 1/2 of remaining sauce, and sprinkle with 1/2 of the cheese
- Repeat layer
- Cover with foil and bake for 40-45 min, or until middle in hot and cheese is bubbly
