Tip: Don’t skimp on eggs or cottage cheese

Making Your Breakfast Tostadas
Breakfast tostadas are so easy to make, I’ll even show you how!
Start with these five ingredients.
While I love the authentic taste of homemade refried beans and tostada shells, canned beans and premade shells are so much easier.
If you have access to farm fresh eggs (from a farmers market, perhaps) by all means use them, it makes a huge difference.
And of course, don’t forget the Shamrock Farms Cottage Cheese.
Using one egg per person, crack the eggs into a bowl.
Beat the eggs with a fork until they are combined. Then, cook them in a saute pan until slightly firm but still moist.
Assembling Breakfast Tostadas
Spread each tostada shell with beans, then top with cottage cheese.
Add some of the scrambled eggs and finish off with diced avocado and a few dashes of hot sauce.
I like to garnish my breakfast tostadas with lime because it helps to bring out all of the flavors.

- Tostado shells, number depends on how many each person wants
- Eggs, one per tostada shell
- Refried beans (I used my favorite brand of canned beans)
- 1 Container Shamrock Farms Cottage Cheese
- 1 Ripe avocado
- Salt and pepper to taste
- Hot sauce and lime wedges if desired
- Heat the beans in a medium sauce pan on medium heat, stirring occasionally
- Heat a saute pan
- While pan heats up, crack the eggs into a bowl and beat them with a fork until well blended
- Add butter to the hot pan; add eggs and cook until firm but still moist
- Dice the avocado
- Spread each tostada first with refried beans and then cottage cheese
- Add scrambled egg and top with diced avocado, hot sauce and a squeeze of lime juice
