Ever since Mr. Disorganized and I started eating healthier at the beginning of the year, we’ve been staying away from take-out and eating in a lot more. To keep from getting bored with the same old meals, we’ve been trying to find ways to make food more creative and exciting. All this while trying to get enough veggies {let’s face it, fruits are easy}. One way to ‘spice’ meals up is by trying new and different spices that you wouldn’t normally use. And, since I’m a short-cut-loving kind of girl, I tend to look for products that help with shortcuts.
Take salad dressings, for instance. They can really change up the flavor of a salad from one to the next, giving you a whole new experience. This is when my inner foodie awakens. I see something like Marzetti® Vineyard Dressing in Balsamic Cabernet and immediately know it would be amazing drizzled over a fresh caprese salad, with its hints of garlic and ground pepper.
I only work 3-4 days per week, but usually end up working 9-10 hour days, sometimes more. Since I’m on my feet all day, I’m pretty spent by the time I get home. And hungry. Really hungry. I don’t {ever} want to spent any great length of time in the kitchen preparing a meal. My favorite go-to dinner is actually a salad.
I start with a few basics- fresh chicken breast, thick-cut bacon slices, Marzetti® Vineyard Dressing Dijon Champagne flavor and a sharp knife. With a little extra prep, I can have dinner ready in no time. First, I dice the bacon into small pieces, then I thinly slice the chicken breast so that it cooks more evenly {and more quickly, too}.
I like to cook the bacon and chicken separately, as I find that all that bacon grease interferes with the fabulous taste of the dressing. Once the chicken is no longer pink, I’m ready to add it to some greens.
My secret weapon is the dressing, though. This is where all the fantastic flavors of the salad comes from. The savory cracked brown mustard seed, garlic and onion gives the chicken a crisp, fresh finish. My favorite place for a relaxing and quiet meal is in my dining room, right by my antique china hutch that I inherited from mother-in-law. I’m instantly in love at first bite, and this is a sign that my inner foodie met the challenge of making a salad more creative and exciting.

Ingredients
- 1 large boneless, skinless chicken breast
- 4 slices thick cut bacon, diced
- 4 cups salad greens
- Chopped pecans and blue cheese crumbles for garnish
- Marzetti® Vineyard Dressing Dijon Champagne flavor
Instructions
- In a medium skillet, cook the bacon over medium heat until just crisp
- Remove from pan and set on a plate covered with a paper towel; set aside
- Wipe grease from pan and heat over medium high heat
- Reduce heat to medium and add chicken
- Cook until chicken is no longer pink; remove from heat
- Evenly divide greens between 2 plates
- Top greens with equal amounts of chicken and bacon
- Drizzle with Marzetti® Vineyard Dressing Dijon Champagne flavor
- Sprinkle with chopped pecans and blue cheese crumbles for added texture
