The cold weather season is one of my favorites. It means holidays, family get togethers and lots of baking. It also means effortless slow cooker meals that leave me time for more important things. There’s prepping the turkey, drinking hot cocoa and decorating the Christmas tree.
Beef stew is one of my families favorites, but sometimes it’s hard to make the same thing over and over again. The other day, I was in the mood for a good beef stew, but wanted to change it up a bit.
Instead of using potatoes, I substituted acorn squash. I also spiced it up with some of my homemade curry powder, which added a fabulous hit of exotic spice to the meal, and served Naan bread with it.
Slow cooker beef stew is a very hearty and satisfying meal, too bad there weren’t any leftovers, though. It would have been the perfect lunch for the next day.

Ingredients
- Non-stick cooking spray
- 2 pounds beef stew meat, cubed {about 1-inch}
- 1 acorn squash, peeled and cubed into 1-inch pieces
- 2 cups whole baby carrots
- 2 15 ounce cans tomato sauce
- 1 medium diced yellow onion
- 2 tablespoons curry powder
- 1 teaspoon black pepper
- Naan bread, warmed
Instructions
- Spray inside of slow cooker with non-stick cooking spray
- Combine all ingredients in slow slow cooker; stir to combine
- Cover with lid and cook on high for 1 hour
- Put on low and continue cooking for 4-5 hours until meat, squash and carrots are tender {times may vary depending on slow cooker- mine runs a little hotter than most, so it only took 3-4 hours}
- Serve with Naan bread
