What could be easier than a crustless pie? A no-bake crustless pie. Unfortunately, that’s just pudding. Not that I object to pudding, because Lord knows there aren’t many desserts I would turn away.
This is still the easiest pie you’ll ever make. You literally combine all of the ingredients in the blender, pour the concoction into a pie dish and top with the coconut and chocolate chips. BAM.
After baking, a thin crust forms on the bottom while the center is transformed into an amazing custard-like filing.
Add the flavors of the crisp coconut and rich chocolate and you’ve got yourself one heck of a pie. To share or not to share is up to you.
I’m going to be honest, though, this pie is so rich you’re going to want to share. Besides, your family and friends will think you’re a baking genius once they taste this chocolate coconut pie.

Yields 8-10
Ingredients
- 1/2 cup butter, melted and cooled
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla
- 1 cup granulated sugar
- 1/4 cup flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1 cup sweetened coconut flakes
- 2/3 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350º
- Spray an 8-inch pie dish with non-stick cooking spray (a 9-inch pie dish also works)
- In a blender, add butter, milk, eggs and vanilla
- Next add sugar, flour, baking powder and salt
- Place lid on top of blender and blend on high for 7-8 seconds
- Pour into pie dish
- Sprinkle with coconut flakes and chocolate chips
- Bake in a 350º over for about 45 minutes
- Place on cooling rack to cool
- Eat within one week

Recipe is easily doubles to make two pies without any further adjustments.
