Hey, it’s Kelley from Miss Information, and I’m here to share with you one of my favorite grilled cheese recipes. I love traditional grilled cheese made with loaf bread and kraft American cheese, but sometimes I like to kick it up a bit. A friend’s husband gave me this recipe and you are going to love it! It is tangy, savory and has a slight kick to it. It has a roasted cowhorn pepper in it, which you may see every day in your grocery store, but, probably never knew what to do with it!
Cowhorn peppers have a low heat and when they grow they curl up at the ends to resemble a steer’s horn hence the name cowhorn pepper. You will mainly find them green in the grocery store.
For this grilled cheese sandwich recipe, I roasted them in the broiler to make them soft and peeled off the skin. They are then layered with deli turkey, swiss cheese and fresh sourdough bread slathered in dijon mustard. The real secret to a good grilled cheese is low heat and a lid on your pan. These two things will get the cheese all melty and soft and keep your bread from burning. It’s all about patience, my friend.

Ingredients
- 1 cowhorn pepper
- 2 slices sourdough bread
- 1 tsp. Spicy Mustard
- 2-3 slices turkey
- 1-2 slices swiss cheese
Instructions
- Slice cowhorn pepper in 1/2 and take out seeds.
- Put under broiler and roast until skin turns black, place in paper or plastic bag for 2 minutes then scrape the black skin off with a spoon.
- Spread mustard on 1 slice of bread and then layer in this order - swiss cheese, turkey, roasted cowhorn pepper, another slice of cheese and the other slice of bread.
- Place in a buttered skillet on low and cover to keep in the heat so cheese will melt about 2 minutes on each side.
- Flip and repeat.
