Happy Pi Day!
Today is March 14th {3.14} which means one thing- Pi Day {Pi = 3.14159}. To celebrate, not only did I make you a coconut cream cheese pie, but I’ve gotten together with some other incredible bloggers who made pies for you as well!
Of course, any day is a reason to celebrate with pie, but we’re also celebrating the fact that my friend and fellow blogger, Julie from White Lights on Wednesday, is getting married, and on Pi Day 2015, no less!
When Julie first invited me to join in on the Pi Day fun, I immediately knew what kind of pie I wanted to make. It’s similar to the very popular pineapple cream pie I made last year for Pi Day, but with a few tweaks.
I’ll be honest, I don’t bake pies very often, but I have a couple of others I’ve been wanting to try out, so you may be seeing more soon!

Yields 8-10
Save RecipeIngredients
- 2 C graham cracker crumbs
- 1/2 C melted butter
- 2 Tbsp sugar
- 3- 6 oz packages of cream cheese {room temperature}
- 14 oz can sweetened condensed milk
- 2 Tbsp lemon juice
- 2 Tbsp coconut rum
- 3 egg yolks
- 1 1/2 C sweetened coconut flakes
Instructions
- Combine all ingredients and mix well
- Using your hands, press on bottom and up sides {about 2 inches} of a 9 inch spring form pan
- Let set in freezer while preparing filling
- Beat cream cheese until creamy
- Add sweetened condensed milk, lemon juice, rum & eggs and beat until combined
- Stir in coconut flakes
- Pour into prepared pan and chill in refrigerator until set {about two hours}
- Top with whipped cream, if desired
