Making the chimichurri cream cheese spread
I roasted my own garlic using my recipe on how to roast garlic, however, feel free to buy a jar of roasted garlic to make the recipe that much easier. I just love the smell of roasting my own.
The recipe is simple.

Ingredients
- 8 ounce container whipped cream cheese
- 5-6 garlic cloves, roasted and divided
- 1/2 cup parsley, stems removed
- 1 teaspoon olive oil
- 1/4 teaspoon red pepper flakes
- Salt and pepper
Instructions
- Place cream cheese and half of the roasted garlic cloves in a small bowl
- Add a dash of salt and pepper
- Mix until combined
- Cover with plastic wrap and set aside
- In a chopper or food processor, combine parsley, olive oil, the remaining roasted garlic, red pepper flakes and a few dashes of salt and pepper
- Pulse until the mixture resembles a paste; set aside
- Remove the cream cheese mixture from the refrigerator and place in a small dish
- Top with chimichurri and drizzle with 1/21 1 teaspoon olive oil
- Serve with crackers
