Not to mention all the seasoned beefy goodness. And no commercial taco seasoning mix here – I used 7 herbs and spices to add the amazing flavor.
It’s great for munching on with your favorite tortilla chips whether you’re watching a game or binging your favorite show.
A couple of weeks ago, my friend and I decided to meet up for cocktails and appetizers before a meeting we had to go to at work – hey, we had to make it bearable somehow.
We ordered this amazing cheese dip with ground beef and it was so good we actually ordered a second one (no judging, you would have done the same thing).
All those tortilla chips weren’t exactly good for my low-carb diet, but some things are just totally worth it.
I knew I had to make my own version at home, and it was so super easy, and just as tasty, maybe even better. Let me just say that you know your recipe is a success if your picky teenage daughter likes it.
Tip: Melt Ground Beef Taco Dip Slowly
And, adding diced tomatoes and green onions made it even prettier than the one we had at the restaurant. You can never go wrong with fresh, right?
I’m not going to lie, there is some effort that goes into this dip. You have to melt the cheese on a super low heat, otherwise, you risk the possibility of burning it.
And that, my friends, would be tragic for everyone. So, just remember low and slow. The results are totally worth it.

Ground Beef Taco Dip Recipe

Ingredients
- 1/2 pound extra sharp cheddar cheese, cubed
- 1/2 pound American cheese {I got mine at the local deli}, cubed
- 1 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/2 pound 80/20 ground beef
- 1/2 teaspoon paprika
- 1 1/4 hot chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground coriander
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 cup water
- Diced tomatoes
- Sliced green onions
- Torrilla chips for dipping
Instructions
- In a medium heavy sauce pan, combine cheeses and heavy cream
- Melt over very low heat, stirring occasionally
- Add garlic powder and salt, stirring to combine
- Keep warm while preparing beef
- Brown meat over medium heat in a medium sized skillet
- Remove from heat and drain fat
- Return to heat and add seasonings
- Add water; stir to combine
- Continue to stir while simmering for two minutes
- Stir the cheese dip and spoon into a serving bowl
- Spoon the seasoned ground beef in the middle of the cheese
- Top with tomatoes and onions
- Serve with tortilla chips
