Cheesy broccoli casserole is a versatile side dish made with fresh broccoli and real cheddar cheese. Your family is sure to ask for it over and over again!
When I was growing up, the only way my mom could get me to eat broccoli was, well, never. Green beans? Don’t even think about it.
Carrots, no problem, as long as I had plenty of ranch to dip them in. My parents were very involved at the church we attended, and at the time, my dad taught the young adult’s Sunday School class. Every once in a while my parents would invite everyone over for a potluck style game night.
At one of these gatherings, I can recall one of the ladies bringing raw broccoli and cheese that she melted for dipping. She insisted it was delicious, and somehow managed to talk my stubborn teen self into trying it.
Oh.my.word. I was amazed at how delicious it was, and have loved broccoli ever since.
I love all sorts of vegetables now, like these blue cheese pepper poppers or these glazed carrots with rosemary, which make a great addition to pot roast.
While I no longer feel the need to drench my broccoli in melted cheese, once in a while it is a must. Like with this cheesy broccoli casserole. You could say it’s my version of the classic green been casserole, but with broccoli.
With only 5 ingredients {4 if you don’t count the crackers}, it couldn’t be easier to make.

Ingredients
- 1 pound broccoli, cut into small pieces
- 1 can cream of broccoli soup (10 1/2 ounces)
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1 sleeve butter crackers, crushed (I used Ritz crackers)
Instructions
- Preheat oven to 350º
- Spray a 9x11 baking dish with non-stick baking spray, set aside
- Steam broccoli until only slightly crisp, about 6-7 minutes, remove from heat and transfer to prepared baking dish
- In a small saucepan, combine soup, cheese and milk
- Heat on medium, stirring occasionally, until melted and hot
- Pour over broccoli
- Top with crushed crackers
- Bake uncovered for about 30 min.
