Once a week, I love to go to my good friend Jennifer’s house. We like to call it ‘stitch & bitch’. What started as a sewing day turned into so much more. We chat, we drink cocktails, we watch anything Jane Austen, we cook, we bake, and, of course, we sew. We’ve both been so busy lately, though, it had been quite some time since we’d gotten together. Until last week. It was awesome. In fact, my sister even joined us. Did I mention cocktails? We always have cocktails.
Anyway, Jennifer made this wicked awesome crustless quiche. It’s got spinach, onion, cheese and eggs. And it’s incredibly easy to make.
This recipe is perfect for brunch with mimosas, too. No need to make ahead, since it’s on the table in less than an hour. Perfect.

Ingredients
- 2 tablespoons butter
- 1 medium onion, diced
- 1 bag fresh spinach
- 12 eggs
- 1 16oz cottage cheese
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400 degrees
- Spray a 10 x 14 baking dish with non-stick cooking spray; set aside
- Sauté onion and spinach in butter, set aside
- In a large bowl, beat eggs and cottage cheese
- Stir in onion and spinach
- Pour into prepared baking dish
- Top with shredded cheese
- Bake at 400 degrees for 30 minutes
