These mini caprese kabobs are the perfect appetizer for unexpected guests. Quick, easy & delicious!
Every two years my entire family gets together for a family reunion in the middle of the summer. We have family come in from around the country and occasionally we even have relatives pop in from Norway. About 55-60 of us meet at a resort in Wisconsin for three full days of games, golf and just catching up. We have themes each time too, one year we did Christmas in July, another year we did the Olympics. It’s a lot of fun!
Since we come from everywhere dinner is assigned by state; Illinois and Wisconsin have one night, Arizona and Minnesota have another night and so on. We make ALOT of food and all hang out on the patios and lawns and have a great time. One year one of my cousins made these kabobs and I thought it was the best idea ever! It’s caprese salad in one bite – no muss no fuss!

Ingredients
- 1 pint grape tomatoes
- 1 container mozzarella pearls (if you can't find them you can cut up the larger Bocconcini)
- Fresh basil leaves
- Balsamic vinegar, for drizzling
- Olive oil, for drizzling
- Salt and Freshly ground black pepper
- Toothpicks
Instructions
- Slice any of the larger grape tomatoes in half. You want them small enough so that all the ingredients fit on the toothpick.
- Tear the basil leaves into 1/2 inch pieces.
- Take a toothpick, add the mozzarella, basil leaf and tomato.
- Repeat until you have your desired amount.
- Drizzle balsamic over the kabobs followed by the olive oil drizzle.
- Top with salt and pepper and Enjoy!
