
I’ve never really been that much of a drinker. I mean, sure, I love a glass of wine at the end of a long day, or even a beer {or two} with some spicy hot wings and a basket of fries. I even like a vodka tonic when I want to go easy on the calories. But I’ve never been a huge fan of whiskey or dark rum. Just not my ‘thing’. I’ve tried a rum and Coke a couple of times, but I can never get the proportions right. I just figured that dark spiced rum was just too ‘spiced’ for my taste.
Made with rum, fresh lemon juice and ginger beer, they seriously taste just like lemonade. Only with a kick. And strictly for grown-ups. Recipe is for Single Serve / {1/2 Gallon}

Yields 1-7
Ingredients
- 3 oz {22 oz} dark rum {Gosling's is the traditional, but we prefer Sailor Jerry's}
- 2 oz {14 oz} fresh squeezed lemon juice
- 4 oz {28 oz} ginger beer {like root beer, but ginger!}
- lemon slices for garnish
- *You can always add a little more rum if you like it a bit stronger. I make Mark's with an extra oz of rum!
- ** One lemon will produce about 4 oz of fresh squeezed juice, so you'll need 1/2 a lemon for a single serving and approximately 5 lemons for a 1/2 gallon {3 1/2 for the juice and 1.5 sliced for garnish}
Instructions
- In a 16 oz glass, combine first three ingredients
- Fill glass with ice and stir
- Add garnish
