Do you love a good burger as much as I do? Are you tired of beef and turkey? I have one word for you.
Bison. That’s right, bison.
Bison is lean, so it’s actually better for you than beef. And to be honest, it tastes better than turkey. Another plus? No gamy taste, just lots of great flavor.
You want to know how to make the flavor even better? Just add some Blue Cheese Garlic Spread. Mmmm. When I first bit into this bad boy I swear it tasted like something I would get at the local pub.
Yep. That good.
I’ll let you in on a little secret, though. I have never had bison until now. Many years ago, when we lived in California, my dad went to lunch with a business associate. They went to a restaurant on Catalina Island. And what do you suppose they had? Why bison burgers, of course! My dad could not stop raving about them.
I knew I wanted to make something with beer, so when I remembered my dad’s raving about the bison, it didn’t take long before the idea of this burger was born. I followed the basic recipe that I use for my meatballs. As far as the spread goes, I had recently learned of pub cheese, and so I made my own variation of it.
Needless to say, I’ll be making these again!
Bison Beer Burgers with Blue Cheese Garlic Spread

Yields 4
Ingredients
- 1 lb. ground bison {check your local butcher shop}
- 1/4 C stout beer {amber beer would work just as well}
- 1/4 C plain bread crumbs
- Salt and pepper to taste
- 4 Buns or Kaiser rolls, lightly toasted
- 4 oz cream cheese
- 1 oz blue cheese dressing or dip
- 1 garlic clove, minced

Instructions
- Combine all ingredients in a medium bowl, mixing well
- Divide into four equal portions and shape into patties {because the meat is lean, they won't shrink much, if at all}
- Grill burgers as you normally would
- In a small bowl, mix all ingredients until well combined
- Place burgers on toasted bun, topping with Blue Cheese Garlic Spread and lettuce. Enjoy!
