Recently, Mark and I started going to a local farmer’s market in a small town near our home. It’s organized by his Aunt, who holds on the property where her consignment shop is. There’s a different band playing every week {they even do open-mike, which is fun to listen to}, people sell fresh eggs, jellies, sauces, breads, a ton of baked goods and other handmade items.
Baking has always been relaxing for me, but I haven’t made a lot of time for it lately. So, when I started seeing all the goodies, it really inspired me to start baking again, since I miss it more than I had realized.
One of Mark’s favorite desserts is cobbler, so I decided to make it for him. Holy wow, was it good. It’s a recipe that a friend gave me, and she actually got it from Trisha Yearwood. I was going to change it up a bit, but, it was so delicious I figured, why mess with a good thing? It’s seriously the best peach cobbler I have ever eaten!
I baked it in my new Viceroy Bowl from Wilton Armetale, which can go from the stove top, oven or fridge right to the table. You can even freeze a casserole in it and put it straight into the oven {it’s perfect for grilling in, too}. Plus, it won’t break, crack, chip, rust or tarnish, which, I think, is pretty amazing. And, it cleans up super easy with soap and water {NOT dishwasher safe}. The best part? It’s gorgeous, but, not so fancy that I can’t use it every day.

Yields 8-10
Ingredients
- 1/2 Cup butter
- 2 15 oz cans of sliced peaches in syrup
- 1 cup flour
- 1 1/2 tsp baking powder
- 1/8 tsp salt
- 1 cup sugar
- 1 cup milk
- Whipped cream
Instructions
- Preheat oven to 350 degrees
- Melt butter in the bottom of a oven/microwave safe 12 x 13 pan
- Meanwhile, drain syrup from one can of peaches and reserve syrup from second can
- Mix flour, baking powder, salt, sugar, milk and reserved syrup; beat until combined
- Pour over melted butter
- Top with peach slices
- Bake for 1 hour, or until top is a golden brown and cobbler is bubbly
- Serve warm topped with whipped cream
