I don’t make breakfast as often as I used to, and I’m not really sure why. Could it be that we’re always in a rush to get out the door and make it to school on time? Or, that by the time the weekend comes I just want to sleep in? Well, the kids are off this week, and, don’t ask me how, but, I managed to make these banana pancakes.
With a little sugar and a banana in the batter, there really is no need for syrup. Top them with some banana slices and chopped pecans for sweet perfection- I actually ate a few of them plain.
In addition to the sweet flavor, I love that these pancakes are in no way pretentious. They don’t try to be fluffier or prettier than they are, they just are.
These thin banana pancakes are sweet enough to forgo the syrup, just top with banana slices and chopped pecans and you're good to go!

Save RecipeIngredients
- 1 C flour
- 3 tsp baking powder
- 1/2 tsp salt
- 3 Tbsp sugar
- 1/4 tsp nutmeg
- 1/2 tsp baking soda
- 1 egg
- 1 1/2 tsp butter
- 1/4 tsp vanilla
- 1 C low fat milk
- 1 medium ripe banana
Instructions
- Combine dry ingredients in a large bowl; set aside
- Place wet ingredients in blender and blend for about 30 seconds
- Pour wet mixture into dry mixture and stir by hand, just until combined {batter will be thin}
- Let set for 10 min
- Meanwhile, heat griddle
- Pour by 1/4 cup fulls onto hot griddle
- Cook until tops bubble; flip carefully {pancakes will be thin}
- Cook for 1-2 min longer, just until pancake is firm
- Repeat with remaining batter
