My mom has been making potatoes au’gratin for as long as I can remember. Their carby, cheesy goodness is an addiction that I can’t {and don’t want to} overcome.
Add bacon {because it makes everything better} and broccoli {to keep from feeling bad about the bacon} to the mix and there’s no way I’m giving it up! This will be on the dinner menu for a while to come.
Here’s all you need:
- 3 large potatoes
- 3/4-1 C freshly grated Parmesan cheese
- 1 C whole milk
- 1 C broccoli florets
- 1 lb crumbled bacon, cooked just until crisp {about 1 1/4 Cups}
Here’s all you do:
- Pre-heat oven to 375*; spray a 1 1/2 qt casserole dish with non-stick cooking spray
- Clean and slice potatoes about 1/8 inch thick
- Layer the bottom of the dish with 1/3 the potatoes
- Add 1/4 C cheese, drizzle with 1 tsp bacon fat, 1/2 C bacon and sprinkle with pepper
- Repeat.
- Add milk, then top with remaining 1/4 C bacon, 1 C broccoli and remaining 1/4 C cheese
- Bake for 50 min or until potatoes are tender. Sprinkle with another 1/ C cheese if desired
