Whenever I think of apple desserts, my mind always goes directly to apple pie. Not because it’s my favorite dessert, but because it’s Mr. Disorganized’s favorite. When we first met, he took me out for apple pie. À la mode. With melted cheddar cheese on top. I’ll admit, I was skeptical at first, but, since I thought he was really cute {and he drove a nice truck}, I wasn’t about to refuse.
Have you ever had a fruit and cheese platter? It goes great together, right? Well, so does the apple pie and melted cheddar. It was so good. Now, there’s no way I’m making an apple pie in the middle of summer, but, we don’t let that stop us from enjoying a fabulous dessert. An apple pie chimi is super easy to make, and only takes about 15 minutes to make.
Simply take a medium flour tortilla, place apple pie filling and shredded cheddar cheese.
Next, take the bottom half of the tortilla and fold up to the middle, just enough to cover the filling.
Next, fold the left and right ends over to close up the sides.
Fold the top of the tortilla down and you’re ready to fry your apple pie chimi. Don’t have a deep fryer? No worries, neither do I. Just use a large skillet that will hold at least two chimi’s. Heat the pan, add oil & let the oil get hot. Place each chimi in the pan and fry until golden. Flip so other side gets golden, too.

Ingredients
- 8 medium flour tortillas
- 1 20-oz can apple pie filling
- 1/2 cup shredded medium cheddar cheese
- Vegetable oil for frying {enough to cover 1/3 way up the side of a large skillet}
- Powdered sugar for dusting, if desired
Instructions
- Fill the middle of a tortilla with 1/4 cup apple pie filling, being careful to stay away from the edge
- Top with 1 tablespoon shredded cheese
- Fold burrito style- fold up the bottom third of the tortilla over the filling
- Fold the left and right sides over
- Fold the top third of the tortilla down over the filling
- Repeat with remaining tortillas
- Heat skillet and then add enough oil to cover your apple pie chimi half way
- Heat oil
- Place 2-3 chimi's in pan at a time, depending on how big your skillet is
- Fry until golden
- Flip and fry until the other side is golden
- Repeat with remaining chimi's
- Serve warm, dusted with powdered sugar
