When I think of summer, my mind automatically drifts to thoughts of sleeping in, laying out, swimming, grilling, BBQ’s and picnics with family and friends, and fruit. Yes, fruit. Fresh, juicy fruit. And all of the wonderful things that can be made from it.
As a kid, I can remember my mom making pineapple upside down cake during the summer, so, when I saw this recipe from Stemilt, I knew right away I had to try it. It reminds me of my mom’s cake, but is different at the same time. Cherries, apples, and delicious white cake covered in a wonderfully sweet glaze of brown sugar.
It’s fabulous and screams summer picnic.
Apple Cherry Upside Down Cake

Yields 8-10
Ingredients
- 3/4 cup unsalted butter (divided)
- 1/3 cup packed brown sugar
- 2 Fuji apples, peeled, cored, quartered and cut into slices
- 15 to 20 fresh Stemilt cherries, pitted and halved
- 1 cup all-purpose, unbleached flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 2/3 cup granulated sugar
- 1 egg
- 1/2 teaspoon pure vanilla extract
- 2/3 cup plain yogurt
- 1/4 cup milk (2%)
Instructions
- Preheat oven to 350*
- Melt {1/2 stick} butter and brown sugar in a large non-stick skillet
- Add apples, tossing to coat; cook 1 minute
- Add cherries; cook 1 additional minute; remove from heat
- In a 9" non-stick round baking pan, lay apple slices around outer edge, slightly over lapping each other
- Spoon cherries into middle of pan {inside circle created by apples}; cover with {no more than}1/3 C of syrup from pan.
- Combine flour, baking powder & soda and salt in a medium bowl; set aside
- In separate bowl, beat remaining stick of butter and sugar; beat in remaining ingredients until well combined
- Carefully pour batter over fruit, taking care not to disturb pattern
- Bake for 45-50 min, or until toothpick inserted in center comes out clean
- Allow cake to cool in pan for an hour; flip pan onto serving plate; let cake cool additional 5-10 minutes before removing pan.
- Serve warm
Notes
As long as you use a non-stick baking pan, there is no need to grease the pan
