I love baking during the holidays, especially when there’s pumpkin involved. One of my favorite treats is homemade pumpkin bread. I’ve got a recipe that I’ve been using for over 20 years, and it comes out delicious every single time. Another favorite I have is pumpkin spice chocolate chip cookies, which, I’ve never actually made before, until the other day. I am happy to report that they came out pretty amazing! They’re soft little cake-like nuggets of pumpkin chocolate deliciousness.
We usually have Thanksgiving at our house, but, this year my SIL wanted to have it at her place, which is totally fine with me. Honestly, after a solid 13 years years or so of hosting every major holiday, I’m kind of over it. This however, leads to a problem. A minor one, but still a problem. Since I’ve never really had to cart food anywhere, aside from the kitchen stove to the table, I didn’t have a clue as to what to use to transport these tasty morsels.

The lid is a snug fit, too, which means it isn’t going to pop off causing food to go flying if I take a corner too fast or if it gets dropped. The fact that it fits perfectly in my refrigerator is sheer bonus.
My cookies were a huge hit, which means they were all eaten, thankfully, because honestly, I didn’t trust myself not to eat all of them myself.

Chewy cake-like morsels of chocolate pumpkin goodness

Yields 4 doz
Ingredients
- 1 box yellow cake mix
- 1/2 C unsalted butter, softened
- 1 Tbsp flour
- 1 3.4 ounce box pumpkin spice flavored instant pudding
- 2 eggs
- 6 ounces chocolate chips
Instructions
- Preheat oven to 350 degrees
- In a large mixing bowl, combine all cookie ingredients and mix well
- Measure 1 Tbsp dough for each cookie and roll into balls, or use a cookie scoop
- Bake on a cookie sheet lined with a silicone baking mat for 10-12 min
- Remove from baking sheet and cool on wire rack
- Makes 4 dozen cookies
